CAULIFLOWER SOUP

 

INGREDIENTS:

MAIN INGREDIENTS:
1. Cauliflower – 250 gm
2. Onion – 1
3. Garlic – 2 cloves
4. Green chili – 1 (use less if spicier)
5. Milk – 150 ml
6. Salt – As per taste

 

METHOD:

  1. First soak the cauliflower in Luke-Warm water added with turmeric and salt for 15-20 mins. After 15-20 mins drain the lukewarm water and then wash it again with clean water.
  2. Now separate the florets of cauliflower.
  3. Now steam these cauliflower florets and chop one onion finely. 
  4. Heat a pressure cooker on a hotplate/gas/stove and add chopped garlic, green chili, chopped onions to it. Sauté them well.
  5. Add little salt to it. 
  6. Add cauliflower florets to it and sauté well again. 
  7. Then add milk and again sauté well. 
  8. Let it cook until one whistle. 
  9. Now remove the lid and let it cool.
  10. Then grind this mixture in mixer to a smooth paste. Add little milk or water if required. 
  11. It should be of smooth creamy puree consistency. 
  12. Heat a Pan and add this mixture to it and stir it well. Add remaining water. 
  13. Add little salt for taste. 
  14. Now bring it to boil and stir well. Serve it immediately in a bowl.
