WHITE PASTA

 

LOW-CALORIE WHITE PASTA

 

INGREDIENTS:

MAIN INGREDIENTS:
1. Cauliflower – 500gm
2. Pasta – 200gm (raw)
3. Onion – 1
4. Rice flour – 2/3 Table spoon
5. Milk – 150 ml
6. Garlic cloves – 4/5
7. Green Chilly – 2
8. Salt – As per taste
9. Oregano – As per taste
10. Chili flakes – As per taste
11. Dextrose – 1 Table spoon. (Optional)

 

METHOD:

  1. Chop onion finely.
  2. Heat a pressure cooker on hotplate/gas/stove as per availability and choice.
  3. Add chopped garlic, green chilly and chopped onions to it. Sauté well
  4. Add little salt to it.
  5. Add cauliflower florets to it and sauté everything well again.
  6. Then add milk to this mixture& again sauté well.
  7. Cook till one/two whistles.
  8. Now remove the lid, let it cool. Once it is cool grind this mixture in mixer/grinder to a smooth paste. Add little milk or water while grinding if required.
  9. Make it to the smooth creamy puree consistency.
  10. Now boil the raw pasta in water, (add little salt to it)
  11. Now strain the boiled pasta.
  12. The left-over water/stock can be used for white sauce as well.
  13. Heat a Kadai (Saucepan), add cauliflower puree to it and stir well.
  14. Add your favourite spices (oregano, chili flakes, etc.) to it and sauté well.
  15. Now add Rice flour paste (add water to rice flour to make smooth paste) to it.
  16. Stir well to avoid formation of lumps.
  17. Once it thickens your white sauce is ready.
  18. Heat a pan and add this sauce to it. And stir well.
  19. Add boiled pasta to this pan.
  20. Add spices and salt if needed for taste.
  21. Now bring this to boil & stir well.
  22. Serve this Immediately.

This White Sauce can be used for any other Vegetables. Or can be eaten with salads too. Very good option for meals or breakfast. Enjoy Low calorie White Pasta with less guilt.
