CAULIFLOWER SOUP
CAULIFLOWER SOUP
INGREDIENTS:
• MAIN INGREDIENTS:
1. Cauliflower – 250 gm
2. Onion – 1
3. Garlic – 2 cloves
4. Green chili – 1 (use less if spicier)
5. Milk – 150 ml
6. Salt – As per taste
METHOD:
- First soak the cauliflower in Luke-Warm water added with turmeric and salt for 15-20 mins. After 15-20 mins drain the lukewarm water and then wash it again with clean water.
- Now separate the florets of cauliflower.
- Now steam these cauliflower florets and chop one onion finely.
- Heat a pressure cooker on a hotplate/gas/stove and add chopped garlic, green chili, chopped onions to it. Sauté them well.
- Add little salt to it.
- Add cauliflower florets to it and sauté well again.
- Then add milk and again sauté well.
- Let it cook until one whistle.
- Now remove the lid and let it cool.
- Then grind this mixture in mixer to a smooth paste. Add little milk or water if required.
- It should be of smooth creamy puree consistency.
- Heat a Pan and add this mixture to it and stir it well. Add remaining water.
- Add little salt for taste.
- Now bring it to boil and stir well. Serve it immediately in a bowl.
