DUDHI (BOTTLE GOURD) KE MUTKE

 

INGREDIENTS:

MAIN INGREDIENTS: 1. Dudhi Bhopla (Bottle Gourd) - 150 gm 2. Rice flour - 3 Table spoon    OR 3. Besan - 3 Table spoon

MASALA: 1. Turmeric (powder) - 1/2 Tea spoon 2. Sundae Masala – 1 Tea spoon (as per your choice) 3. Dhana- Jeera powder - 1 Tea spoon 4. Chaat Masala - 1/2 Tea spoon 5. Sesame seeds - 1 Tea spoon 6. Salt as per taste 7. Oil for brushing

FOR SEASONING AND GARNISHING: 1. Grated Coconut - 1 Table spoon 2. Coriander - 1 Table spoon 3. Mustard seeds - 1/2 Tea spoon 4. Sesame Seeds - 1/2 Tea spoon 5. Oil for brushing.

 

METHOD:

  1. Soak the Entire Dudhi (Bottle gourd) in a lukewarm water added with little turmeric and salt for 15-20 min.
  2. After 15-20 min. are over drain the lukewarm water and wash Dudhi (Bottle gourd) with clean water.
  3. Afterwards grate this Dudhi (Bottle gourd) completely.
  4. Steam this grated Dudhi (Bottle gourd) for 5-10 min. One can use Hotplate/Gas burner for this purpose as per the availability and choice. 
  5. Add Rice flour/ Besan to the steamed Dudhi (Bottle Gourd) and mix it properly. 
  6. Now add all the Masala's (Sundae masala, turmeric powder, Dhana-jeera powder, Chaat Masala, Sesame Seeds and salt as per taste) mentioned in the ingredients list to this mixture. 
  7. Mix them properly and evenly.
  8. Apply 2 drops oil on your palm and make thumb size elongated balls from this mixture. 
  9. Now again steam these balls for 10 min. 
Now you can make these Mutke's in with four different variations as per your choice. Like,
  • First method:
  1. After Steaming for 10 minutes as mentioned in step-7 one can eat these steamed Dudhi ke Mutke as it is. They are ready to eat. 
  2. Serve them hot. 
  • Second Method:
  1. Now keep a pan (tawa) for heating on a hotplate/gas burner/stove as per choice and availability. 
  2. Brush it with 2-3 drops of oil. 
  3. Add mustard seeds and sesame seeds to it. 
  4. Now place the steamed Mutke on this pan (tawa) and sauté them for 5 min. 
  5. Once they become little crispy turn off the flame. 
  6. Garnish it with Coriander and Coconut. 
  7. Serve them hot. 
  • Third Method:
  1. Heat the Pan (Tawa) on a hotplate/gas burner/stove as per choice and availability.
  2. Brush it with 2-3 drops of oil. 
  3. Now place the steamed Mutke on the heated pan (Tawa).
  4. Roast it for 10-15 min, till they become golden brown and crispy. 
  5. Serve them Hot with Chutney or Curd.
  • Fourth Method:
  1. Pre heat the Air-fryer for 5 min. 
  2. Place the steamed Mutke in the Air-fryer for 15 min at 180-degree temperature. 
  3. Serve them hot and crispy with Chutney/ Curd/ Sauce.
