Red Pumpkin Raita

 

RED PUMPKIN RAITA

 

INGREDIENTS:

  1. Red Pumpkin – 250 gm
  2. Sugar – 1/4 Teaspoon(If pumpkin is not sweet).
  3. Salt – As per taste
  4. Cumin seeds – 1 /4th Teaspoon
  5. Green chili – 1
  6. Curd – 2 Tablespoon
  7. Coriander – 1 Tablespoon

 

METHOD:

  1. First soak all the vegetables with their intact skin in Luke-Warm water with added turmeric and salt for 15-20 mins. After 15-20 mins wash them with clean water.
  2. Cut Red Pumpkin into small square shape pieces.
  3. Steam these red pumpkin pieces for about 5 – 8 min.
  4. Now heat a pan on Hotplate/Gas/Stove as per choice and availability.
  5. Add Cumin seeds and green chili to this and sauté well.
  6. Now add steamed pumpkin pieces to this pan and again,sauté well.
  7. Add salt and sugar to this. Sauté again.
  8. Cover the pan with lid and let everything steam for 5 min.
  9. Switch off the gas and let it cool.
  10. After it is cooled add curd to thisand mix well.
  11. In the end add finely chopped coriander and mix everything well.
  12. Now it is ready to eat.
  13. You can either refrigerate it and eat it like a salad.

Or

  1. You can eat it immediately with a Rice /Bhakri/Chapati.
  2. It is completely low in calories since it is a zero oil dish. But equally tasty and healthy.
