  Have you ever imagined that you can eat Cauliflower that too like a rice? Yes, it is true! This Cauliflower rice does not contain a single grain of rice but it is entirely made from Cauliflower grinded to the size of rice grain and cooked. This exactly looks like a rice and even serves purpose as a rice. It is also low in calories which makes it as an ideal alternative for the rice in the diet of health conscious people. And it is yummy too, you can even make a Biryani/Pulao from this rice. Really an amazing recipe, let’s try it!

 

CAULIFLOWER RICE

 

INGREDIENTS:

MAIN INGREDIENTS:

       1. Cauliflower – 1 (Big size)        2. Onions – 2 (Medium size)        3. Sunday Masala 1 Tea spoon or as per taste        4. Coriander - 1 small Bowl (Vati)        5. Salt - As per taste.        6. Water – One and half glass.

 

 

METHOD:

  1. Soak the cauliflower in salt and turmeric (Lukewarm) water for 15-20 minutes to remove all the pesticides and insecticides.
  2. Wash the cauliflower with plain water after 20 minutes.
  3. Make small florets of this cauliflower.
  4. Grind these florets in the food processor till they resemble grains of rice.
  5. Take two medium size onions as mentioned in the ingredients and chop them finely.
  6. Keep a vessel (kadhai) on Hotplate/Gas burner/stove and add these two finely chopped onions into it. Sauté’ them till they turn pinkish brown.
  7. Add salt and water to these onions to make them soft faster.
  8. Now add the finely ground cauliflower to these onions in the vessel and mix it properly.
  9. Then add the Sunday masala, water and little coriander and mix it again. Cover the vessel with lid and allow it to cook for around 15 minutes or till the cauliflower gets cooked.
  10. Adjust salt and Sunday masala according to taste.
  11. Your zero oil low calorie alternative to rice is ready!
  12. Garnish it with the remaining coriander and serve it hot.
One can make following variation to this as per choice.
  1. Keep it as a plain rice and eat with any dal or curry.

OR

  1. Add Spring onion and vegetables as per choice to make a fried rice or Pulao.

OR

  1. Make a gravy of vegetables and mix with it to make Biryani.
