  Have you ever imagined that eating vegetables like Dudhi, Red pumpkin, Cabbage together will be a treat? Yes, it will be a treat now! You can eat them in the form of Mix Veggie Mutke. They are not only tasty and yummy but also very nutritious. It can be an ideal option for your evening snacks which can be delicious as well as low in calorie. So let’s make them and enjoy!

 

MIX- VEGGIE MUTKE

 

INGREDIENTS:

MAIN INGREDIENTS: 1. Carrot - 1(Medium Size) 2. Bottle Gourd/Dudhi - 100 gm 3. Red Pumpkin - 150 gm 4. Cabbage - 100gm 5. Rice flour - 3 Table spoon, OR 6. Besan - 3 Table spoon

MASALA: 1. Turmeric - ½ tsp 2. Sundae masala – 1 tsp (As per choice) 3. Dhana-Jeera powder – 1 tsp 4. Chat Masala – ½ tsp 5. Salt (As per taste) 6. Seasame seeds - 1 tsp 7. Oil - For brushing.

 

METHOD:

  1. Grate all the above mentioned vegetables (Carrot, Red pumpkin, Bottle gourd/Dudhi, Cabbage).
  2. After grating soak these vegetables in a lukewarm water for approx. 20 minutes.
  3. After 20 minutes are over, drain the water and wash these vegetables with clean water.
  4. Then steam All these grated vegetables for 5-10 min in a pan (Kadhai). For this purpose, one can use Hotplate/gas burner/stove as per choice and availability.
  5. Now add Rice flour/Besan into these steamed vegetables and mix it properly.
  6. Now add all the masalas (Sunday masala, Chaat masala, Turmeric powder, Dhana-Jeera powder, Sesame seeds, and salt as per taste) to this mixture.
  7. Mix them properly and evenly.
  8. Apply 2 drops oil on your palm and make thumb size elongated balls from this mixture.
  9. Now again steam (Using Hotplate/Gas burner/Stove) these balls in a pan (Kadhai) for 10 min.
  10. Now you can prepare these Mix Veggies Mutke by four different methods, such as,
First method:
  1. Steamed Vegetable Mutke are ready to eat.
  2. You can Serve them hot.
Second Method:
  1. Now heat a Pan (Tawa) on a Hotplate/Gas burner/Stove).
  2. Brush it with 2-3 drops of oil.
  3. Add mustard seeds and sesame seeds on it.
  4. Now put the steamed Mutke on this pan (Tawa) and saute them for approx. 5 min.
  5. Once they become little crispy, turn off the flame.
  6. Garnish them with Coriander and Coconut,
  7. Serve them hot.
Third Method:
  1. Keep a pan (Tawa) on a Hotplate/Gas/Stove for heating.
  2. Brush it with 2-3 drops of oil.
  3. Now put these steamed Mutke on this Pan (Tawa).
  4. Roast them for 10-15 min,till they become golden brown and crispy.
  5. Serve them hot with Chutney or Dahi (Curd).
Fourth Method:
  1. Pre-heat the Air-fryer for 5 minutes.
  2. Place the steamed Mutke in to the Air-fryer for 15 min at 180-degree temperature.
  3. Serve them hot and crispy with Chutney/ Dahi (Curd)/ Sauce (Khatta-Meetha Sauce)
